Given this is a personal question, one might always choose not to answer this. Since anything one says can be used against them, it is best to provide as little information as possible, unless it is extremely necessary.
The police can also ask one to step out from their vehicle or stop recording the whole thing. Both of these can be denied by the person who has been pulled over. One might not be comfortable with stepping out from the safety of their vehicle and conveying the same to the cops is not a crime.

However, while local laws often vary regarding recording rights, politely informing the police that you would want to continue recording for your own safety is legally allowed. In case they force you to stop recording, it is best to listen to them at that moment and then mention these acts later to see if any legal action can be taken.

Therefore, it is best to not directly answer the question and mention that you are not comfortable with what is being asked.
